Despite how it might seem at times - based on many of the dinner recipes I've posted - we really truly do eat food other than Asian stirfries and curries for dinner - but it would be fair to say we love em - and this particular dish is no exception!
Ingredients:
Chicken or beef
Veges for stir frying
1 tin coconut cream
1 heaped Tbsp Massaman curry paste
1 heaped Tbsp peanut butter
2 tsp sugar
1/2 cup water
Stir fry veges and set aside.
Add chicken/beef to wok and stir fry with the Massaman curry paste.
Add peanut butter, sugar, water and coconut cream and bring to boil. Simmer for 10-15 minutes and add more water if necessary depending on how much liquid you like in your curry.
Serve with rice and as you savour each mouthful imagine yourself to be on a secluded beach in Koh Samui staring out on beautiful islands and crystal waters, instead of in your dining room flanked by two little people who are chattering away like monkeys and occasionally flying wayward food in your direction!
You know what? Despite how inviting the former might sound, I know I'd still take the latter every day given the choice!!!
