MNM's Bake: Satay Meatballs

On a cold, wintry night with a southerly raging outside there's nothing like warming your insides with a rich and tasty meal.

Ingredients:
Veges for stir-frying
Noodles - we use Fantastic dried thin noodles

For the sauce:
2 tbsp soy sauce
2 tsp garlic
2 tsp ginger
1 tbsp sweet chilli
1/4 cup peanut butter
Water

For the meatballs:
Mince
1 egg
2-3 Tbsp breadcrumbs
1 Tbsp sweet chilli sauce

1. Fry your selection of veges until cooked



2. Cook noodles (we use 3 bunches)


3. Put the ingredients for the sauce together and then add to the veges



4. Put the meatball ingredients in a bowl and mash all together. form into meatballs and fry in a pan with a metal handle with a little oil. Once browned on both sides, you can put the pan in the oven to ensure the meatballs are fully cooked through.


5. Put noodles in bowl with veges/sauce poured over and meatballs on top.


Savour each mouthful as your insides are deliciously warmed up, and the cold that was seeping into your bones on this chilly night retreats for another day.
