MNM's Bake: Quick & Easy Chow Mein

As you know, we're all about quick and easy (but still nutritious) dinners in our house. This is our adaptation of a recipe I originally spied over at Striking Keys last year. Mince and rice aren't things we normally pair together in our meals so this is a great example of where we have managed to do so. I also love how this is an 'all in one pan' meal which also means less washing up to do too - and that's always a good thing in my book!

Ingredients:
Mince
1 onion finely chopped
Veges for stir frying (these are optional but we always add broccoli, courgette, peppers and cabbage to every meal!)
2 tsp chicken stock
1.5 tsp soy sauce
1.5 tsp sugar
1.5 tsp mild curry powder
1 cup uncooked rice
A handful of sultanas
2 cups water

1. Stir fry the veges and then remove from the wok.


2. Add mince and onion and brown/saute them together.


3. Add the veges back to the wok, and then add all the remaining ingredients to the pot in the order outlined above.


4. Mix together, then cover and cook on low heat for 20-25 minutes (or until the rice is soft and the water is fully absorbed). Make sure you stir occasionally. You might also find you need to add more water if the rice soaks it all up before it's fully cooked.


Serve and enjoy!

I have been living off the original of this recipe all year! I do it for meals for new mums, you can chuck it in a ice cream container and they just heat it up and dinner is done.

My variation is to use vermicelli instead of rice, cook it seperately and mix it in at the end. It makes the cooking time of the mince etc less too :)
