Recipe: Healthy Choice: Muesli Scones

Finding a healthy alternative to the age old scone recipe is no easy task. But this recipe certainly does it for me. This muesli scone recipe is gluten free, sugar free and dairy free while still tasting delicious.

Ingredients:
2 cups almond meal (flour)
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1/4 cup dried cranberries
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup cashews or pistachio nuts coarsely chopped
1 large egg (must be large to bind properly)
2 tbsp honey

1. In a large bowl combine the flour, sea salt and baking soda.

2. Stir in the dried fruit, nuts and seeds

3. In a separate small bowl, combine the egg and honey until mixed together.

4. Stir wet ingredients into dry.

5. Use your hands to form a dough.

6. Shape dough into a rectangle that can be cut into 16 squares.

7. Bake at 180 degrees Celsius for 10-12 minutes.

The scones will keep for several days in an airtight container if they last that long.
